Crockpot Overnight Oatmeal

If you are anything like our family, your feet hit the ground running in the mornings.  There are no lazy lounging days, sleeping in, or quiet begginings.  No siree it, it is survival of the fittest around here.  With people running, yelling, laughing and changing diapers, it seems like we barely have a second to breathe in the mornings. 


Breakfast has to be on the table quick and since I starve these kids every.single.day, it has to be filling.  Crockpot Overnight Oatmeal to the rescue.  This dish has been a lifesaver more than once and can be easily customized to your families preferences.  Check it out, you won't be dissapointed!

Crockpot Overnight Oatmeal*


3c water


1 3/4c apple juice


1 1/2c steel-cut oats (DO NOT substitute with any other oats...unless you like glue.)


1 med pear or apple, cored and chopped


7oz(ish) mixed dried fruit, we usually just use raisins


1/3c packed brown sugar


1/2 tsp salt


1/2 tsp ground cinnamon


Vanilla yogurt


granola


Comine all ingredients EXCEPT yogurt and granola into crock pot.  Stir to mix everything.  Cover and cook on low for 6-7 hours.  Serve topped with yogurt and granola.

A few words of advice:


Play with the recipe, it is very forgiving and oh so yummy.  We have used pear sauce or canned pears instead of the fresh fruit.  We have left out the dried fruit, added more, added nuts, or went plain jane and only used the apple juice for flavor.

If you have a crock pot liner USE IT!  This dish while oh so scruptious, is a nightmare to clean up.  Beacuse it cooks so long  the outer layer of oatmeal sticks to the sides of the pot like tar on a roof!  If you don't use the liner, plan on soaking your crock pot for a couple hours after breakfast.

Yogurt is great on top but we have also used fresh cream sprinkled with cinnamon for a delish variation.  Milk is great too and I can only imagine how tasty kefir would be so don't forgo because the yogurt is gone!

ok...so I JUST LOVE that I found this info because while we LOVE our steele cut oats...we hate to cook them because they take so long in the morning. I have set up my crockpot and am already looking forward to breakfast in the morning. Thanks for sharing.

I know exactly what you mean! That is the reason we finally tried a crock pot version. Just remember if you don't like them in the morning, mix up the ingredients next time. I don't always like the way they turn out (although everyone else does!) and usually its because of one little ingredient! :) Good luck, I hope you enjoy them.

DO NOT subsititue these for rolled oats…unless you like glue.
I think you might mean Do not substitute rolled oats for these?
